Mixed Universe is the latest release in our Outer Reaches Series, a cosmological quest through all things fruit. We start with a Sour Blonde base, letting it rest in a foeder with our house Brettanomyces and Lactobacillus for six months, followed by a year-long stint in fruiting tanks with Plum, Guava, Apricot, Pineapple and Passionfruit. The result is dry, complex and fruit-forward with an acidic punch through the finish. Mixed Universe is a 2019 debut brew, available exclusively on draft.
