Every year, we celebrate our anniversary with a special, limited-edition brew, and Now and Ten continues the tradition! The idea was to create a novel brew only made possible by the science of today; a beer that could serve as an Inspiration to our ten-year-younger selves. The result is a Thiolized IPA that transcends space and time and lands us on an Island of tropical fruit aromas and vibrant notes of passionfruit, mango and blueberry. Now and Ten is a Thiolized IPA. What is a Thiolized IPA? What does it bring to the table, stylistically?

Pioneered by our pals at Omega Yeast, we’ve been having a ton of fun over the past year experimenting with various Thiolized yeast strains to create some novel, exciting brews! Thiols are aromatic compounds produced during the brewing process that evoke tropical, berry and citrus fruit flavors and aromas. These new strains generate more thiols and are much more intense and vivid than is achievable with more traditional strains. These fruity thiols are the perfect compliment to the intense hop regiment in Now And Ten, amplifying the intensity of the aroma and flavor way beyond what can be achieved with traditional brewing methods.

 

What are the notable characteristics of this beer?

This beer is a massive hop bomb, with the combination of newly developed hop products and thiolized yeast delivering intense notes of fresh papaya, juicy mango, and ripe blueberry. Medium-high bitterness is balanced by mild, crackery malt sweetness, leading to a slightly bitter finish that lingers pleasantly with flavors of tropical punch and resinous pine.

 

What makes you want to drink this beer?

It’s time to celebrate! We’ve always been fans of hop-forward beers, so it’s only fitting that our tenth anniversary beer is a heavily hopped IPA. The tropical flavors are perfect for the summer weather that’s taken over, and the toned down 6.5% abv means that you can enjoy more than one while helping us celebrate 10 years. Cheers!

 

Are there any other Thiolized IPAs you dig?

Thiolized by Anchorage Brewing, and Thiolized IIPA from Untitled Arts are both great beers.

Appearance: Light gold with just slight chill haze and thick, white foam.


Aroma: Massive notes of papaya, passionfruit, mango, and blueberry.

 

Taste: Medium bitterness and just enough balancing sweetness accent the tropical thiols and hop derived fruity notes perfectly. 

 

Mouthfeel: Medium-low body with medium carbonation and a crisp finish from medium bitterness.

 

Overall: This heavily hopped thiolized IPA delivers intense notes of fresh papaya, juicy mango, and fresh blueberry, backed by just enough malt sweetness to balance the palate cleansing bitterness. 

 

What foods would pair well with Now and Ten?

Now And Ten would go great with some grilled buffalo wings. Or a slice of birthday cake!

 

Ideal glassware for Now and Ten?

Anything with an inward curve at the rim to help capture and concentrate the intense hop and yeast aromas.
